Home-made ginger ale - a substitute for non-alcoholic beer


Soda was not always the artificial flavoring mixture and high fructose syrup we know today. These natural fermented drinks contain probiotics and beneficial enzymes that improve your overall health!

The recipe below uses a fermented ginger culture to create a natural carbonated drink.

Ginger Ale Recipe

The composition of the product:
1-2 inches of fresh ginger root
½ cup organic sugar
½ cup fresh lemon or lime juice
½ teaspoon of sea or Himalayan salt
8 glasses of filtered (without chlorine) water

Place three glasses of water, sugar, ginger root and salt in a saucepan and bring to a boil.
Cook for about five minutes, until the water starts to smell like ginger and sugar does not dissolve.
Remove from heat and add remaining water.
Add fresh lime or lemon juice and whey.
Transfer the mixture to a 2 liter glass jar with a sealed lid.
Mix well and cover.
Leave on for several days before carbonation. There should be a bubble when you remove the cover.
Put in the refrigerator.
Strain before use.

Classic Ginger Ale

  • ginger root - 5 cm
  • water - 300 ml
  • sugar - 10 tablespoons,
  • lemon - 2 pieces of medium size,
  • dry yeast - 3-5 grams.

The amount of sugar can be changed at your discretion, the minimum quantity is 3 tablespoons. From the black root of ginger, dark ale is obtained with a pronounced aroma. From light - a more balanced drink (recommended).

1. Wash the ginger root and finely grate.

2. Boil water, remove the pan from the heat, add ginger and sugar, mix. Squeeze juice out of lemons.

3. Cool the mixture to room temperature (be sure to lower than 30 degrees), add lemon juice and yeast diluted according to the instructions.

4. Pour the wort into a plastic two-liter bottle (I do not recommend using glass containers because of the risk of tearing), fill the remaining space with plain water, leaving 2-3 centimeters of free space. Close the cork tightly.

5. Transfer the vessel to a dark place with a temperature of 18-25 ° C, leave for 24-48 hours.

6. When the bottle is solid, put the ginger ale in the refrigerator for 3-5 days for aging.

7. Carefully open the bottle, filter the drink through cheesecloth, pour into storage containers, close hermetically. After 2-3 hours, you can start tasting.

Alcoholic Ale

The result is a low alcohol (up to 2% alcohol) homemade ginger ale. Shelf life in the refrigerator up to 10 days.

Alcohol Free Ginger Ale

Preparing easier and faster than the previous option, as it does not require fermentation. It is a flavored soda with the scent of ginger.

  • ginger root - 5-7 cm,
  • lemons - 5-6 pieces,
  • black pepper (peas) - 1 teaspoon,
  • plain water - 2 liters,
  • mineral sparkling water - 2 liters,
  • sugar - 0.5 kg.

Several lemons can be replaced with lime or orange, this will give homemade ale original notes of taste. Pepper in the composition is optional.

1. Add chopped ginger root and pepper to 1 liter of plain water. Bring mixture to a boil, reduce heat and simmer for 5 minutes.

2. Strain the broth through cheesecloth, add another 1 liter of water, boil again for 5 minutes, strain, add all the sugar, mix.

3. Squeeze the juice from the lemons and mix with ginger decoction.

4. Before serving, dilute non-alcoholic ginger ale with highly carbonated mineral water in a 1: 1 ratio.

It turned out that this drink is known in England since the 15th century. Ale was obtained by fermentation without the use of hops, using herbs or spices that were cooked in a must. The resulting carbonated drink was used for the preparation of alcoholic cocktails. Moreover, this drink in the Middle Ages was considered a product that was revered along with bread.

How to make alcoholic ginger ale at home

Recipe 1. Classic Yeast Recipe

To make ale, 2 liters of water will require:

  • 250 g cane sugar
  • juice from half a lemon,
  • a quarter teaspoon of yeast,
  • a tube from a dropper.

Rinse ginger and lemon well. Peel the ginger root and grate. Squeeze juice out of lemon. Dilute the yeast in warm boiled water, add sugar, ginger and lemon and mix everything.

Pour water up to the shoulders in a jar so that there is room for liquid to ferment. Close the jar with a capron lid, in which to make a hole in advance and insert a plastic tube from the dropper into it. This device is called a hydrozator and a tube is necessary to remove the resulting gases.

Close the jar with a lid with a hydrozator, and lower the second end of the tube into a container of water. For two days they leave the liquid to ferment. After being filtered, poured into bottles and put in the refrigerator, for another day. And that’s it, home-made healing drink is ready to drink.

Recipe 2. Ginger ale with orange at home.

The layout uses:

  • ginger root pulp 50-100g,
  • sugar -200g
  • 1 teaspoon of yeast
  • 1 orange
  • boiled water - 3 liters.

Recipe 3. Beetroot-Ginger Ale at Home

To prepare this beautiful drink you need to prepare:

  • 1 beet, medium-sized, ginger root -60 g, 1 lemon, 200 g sugar, 5 g yeast and 2.5 l of water.

How to do: peel and grate, put the mixture on the bottom of the can. Squeeze the juice from the orange, mix it with sugar and yeast, add to ginger. Pour the mixture into a little warm water and mix well.

Cover with a lid with a hydrozator on top, as described in the first recipe. After two days, strain, bottle and put in the refrigerator.

Recipe 4. Ale with raisins

This recipe also provides for the fermentation process, which takes place due to sugar and raisins. The layout of the necessary products:

  • 200 g of ginger root
  • 4 l of water
  • 3 lemons
  • half a kilo of sugar
  • 100 g of raisins.

This recipe requires a little more time to cook. First you need to cook the raisins with raisins. In a liter jar, put all the raisins that are indicated in the layout, chop 1 lemon and juice together with the pulp with raisins, add 2 teaspoons of sugar and a teaspoon of ginger gruel.

Pour the mixture with 300 ml of water and put it in the heat for 3 days. From the 4th day, daily for 7 days, add 1 teaspoon of ginger and 2 teaspoons of sugar to the jar.

On the 10th day, boil 600 ml of water and dissolve half a sugar in it. After the sugar is completely dissolved, squeeze the juice of the remaining lemons into the water. Pour the syrup into a prepared jar of water (3 l of water), pour the leaven with raisins here as well. Leave the drink for another 4 days. Then bottle and refrigerate.

How to make a non-alcoholic recipe

The recipe for this carbonated drink without yeast is even simpler than the first.

Recipe 1. To make ale, 3 liters of water will require:

  • 150 g of ginger pulp,
  • 4 tbsp cane or regular sugar,
  • 3 lemons
  • 3 l of sparkling water,
  • mint leaves for taste.

Rinse ginger and lemon well. Peel the ginger root and grate and sprinkle with sugar. To clear a lemon too to exclude excess bitterness and to grate too, having added to already prepared mix. If there is a juicer, then you can squeeze the juice from lemons. Pour the mixture with sparkling water and let it brew for 10–15 minutes. After that, strain the ale and put it on the table.

Recipe 2. How to make ale with honey

In this recipe, ale is used instead of sugar in honey. The layout uses:

  • 50 g slurry of fresh ginger root,
  • 1 lemon
  • liter of mineral water,
  • 3 teaspoons tea honey.

Peel the lemon, as well as the root, chop finely with a knife or grate, mix with honey, let stand a little, soak and pour mineral water. The drink needs to stand for an hour - another in the refrigerator.
